Soft, floral, faintly salty
Elderflower is in season for about two weeks, so in June nobody here does much else. We pick in the morning and have it steeping by lunch.
A few grains of sea salt keep the sweetness in check and make the flower taste more like itself. Calm, clean and very easy to finish.
