Blackcurrant sour

Sharp, purple and a little grown-up. The one recipe here that asks for a shaker, and earns it.

Time

Serves

2 glasses

Difficulty

Medium

Two coupes of blackcurrant sour seen from above on a steel worktop, a blackcurrant floating on the foam of each

The foam should hold a berry without sinking. If it does not, shake longer.

Ingredients

Makes

2 glasses

Units

  • 100 mlgin
  • 50 mllemon juice, freshly squeezed
  • 30 mlsugar syrup
  • 2tablespoons blackcurrants, fresh or frozen
  • 1egg white, or 30 ml aquafaba for each
  • 100 mlSprig Blackcurrant, cold
  • Ice for shaking

You will need

one can of Sprig Blackcurrant

How to make it

Method

01

Crush the blackcurrants in the bottom of a shaker with the sugar syrup until they give up their colour.

02

Add the gin, lemon juice and egg white. Shake hard without ice for fifteen seconds to build the foam.

03

Add a handful of ice and shake again until the shaker is too cold to hold comfortably.

04

Strain into two chilled coupes and let the foam settle for a moment.

05

Pour 50 ml of Blackcurrant gently into each glass. The foam will rise to the rim on its own.

The tip

Leave out the gin and add another splash of Blackcurrant. It is still a proper sour, and you can have two.
