Ingredients

Makes

4 glasses

Units

  • 2chamomile tea bags or the same in tablespoons of dried flowers
  • 300 mlwater, just off the boil
  • 1ripe pear, thinly sliced
  • 1tablespoon of honey
  • 2cans of Sprig Chamomile & Pear, cold
  • Ice

You will need

two cans of Sprig Chamomile & Pear

How to make it

Method

01

Steep the chamomile in the hot water for five minutes, then remove it. Stir in the honey while the tea is still warm.

02

Add half the pear slices and cool the tea quickly by standing the jug in a bowl of iced water.

03

Fill four glasses with ice and divide the cold tea between them.

04

Top each glass with Chamomile & Pear and add the remaining pear slices.

The tip

Make the tea the night before and keep it in the fridge. It gets rounder and more pear-like by morning.

Conference pears, picked firm. Slightly underripe ones keep their shape in the tea.
